Ingredients

6 medium seedless oranges
1/4 cup slivered red onion
1/2 cup pitted kalamata olives, sliced
1/2 cup fresh basil, sliced
1 tablespoon balsamic vinegar
2 tablespoons extra virgin olive oil
1 tablespoon honey
1/2 teaspoon salt
1/4 cup shelled pistachios, toasted

Preparation

Peel the oranges by slicing away the peel and pith, then slice into thin rounds. Place the rounds on a platter.
Sprinkle the red onions and olives over the oranges, then sprinkle with basil.
In a cup, whisk the balsamic vinegar, olive oil, honey and salt. Drizzle over the oranges. Sprinkle with pistachios and serve.
