4 seedless cucumbers, peeled and diced
1/2 small red onion, slivered
1/4 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
2 medium tomatoes, cut in wedges
1/4 cup fresh lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
Freshly ground black pepper

Preparation

Place the cucumbers, red onion, parsley, mint, and tomatoes in a large bowl.
In a cup, whisk the lemon juice, olive oil, salt and pepper, and drizzle over the vegetables. Toss to coat and serve.
